INGREDIENTS
- 500g blue wildebeest fillet
- Willow Creek Parmesan-Infused Extra Virgin Olive Oil, for drizzling
- Zest of 1 lemon
- 2 tbsp capers
- Microgreens, for garnish
- Grana Padano Parmesan, shaved
- Willow Creek Cabernet Sauvignon Balsamic Vinegar, for drizzling
- Salt and freshly ground black pepper, to taste
For the Bruschetta:
- 1 baguette, sliced
- Willow Creek Truffle Flavoued Extra Virgin Olive Oil, for brushing
- Fresh rosemary, finely chopped
- Olive oil, for brushing
INSTRUCTIONS
EASY TO FOLLOW METHOD
- Prepare the Fire: Set up an open fire or grill. Allow the coals to burn down until they’re white and hot.
- Sear the Fillet:
- Season the blue wildebeest fillet with salt and pepper.
- Grill the fillet over the open fire, searing it for about 2-3 minutes on each side until you reach your desired doneness.
- Remove the fillet from the fire, let it rest for 5-10 minutes, then slice it thinly.
- Prepare the Bruschetta:
- Brush the baguette slices with a mixture of Willow Creek Extra Virgin Olive Oil and Willow Creek Truffle Flavoued Extra Virgin Olive Oil, then sprinkle with chopped rosemary.
- Toast the slices over the open fire until golden and crispy. Set aside.
- Assemble the Carpaccio:
- Lay the thinly sliced seared blue wildebeest fillet on a serving plate.
- Drizzle the fillet with Willow Creek Parmesan-Infused Extra Virgin Olive Oil and a touch of Willow Creek Cabernet Sauvignon Balsamic Vinegar,
- Sprinkle lemon zest and capers over the fillet.
- Top with microgreens and Grana Padano shavings.
- Serve:
- Serve the carpaccio with warm truffle and rosemary bruschetta on the side.
