Rare Roasted Fillet served on top of Oven-Baked Olive Focaccia with a Chopped Garden Salad.

This family feast is a wonderful demonstration of how to make the most of your money this Heritage Month. Despite choosing a premium cut of meat, you can effortlessly serve a large gathering by thinly slicing the fillet. We pair the meat with a crisp, finely chopped traditional South African salad and a comforting focaccia; slice and savour the bread while it’s still piping hot alongside the fillet and salad. Bonus! The bread has a remarkable ability to mature gracefully, making it an excellent choice for breakfast toast the following day or for creating delectable salad croutons when toasted.

INGREDIENTS

Focaccia with Parmesan Flavoured Olive Oil:

  1. 1 kg of Focaccia mix  
  2. 10 g of yeast 
  3. 700 ml of lukewarm water  
  4. 30 ml of Willow Creek Parmesan Flavoured Olive Oil   
  5. Coarse Salt  

INSTRUCTIONS

Focaccia with Parmesan Flavoured Olive Oil:

  1. Pre-heat the oven to 200 degrees Celsius.  
  2. Place the dry ingredients in a mixing bowl. 
  3. Add 500 ml of the water and mix slowly until combined.  
  4. Add the remaining water and mix on high for three minutes until a lumpy dough is formed.  
  5. Place on a baking tray and let the mixture rise for an hour. 
  6. Press holes into the dough with your fingers and roughly drizzle with more Willow Creek Parmesan Flavoured Olive Oil and sprinkle with coarse salt. 
  7. Bake for about 15 minutes until golden brown.

WHAT YOU NEED FOR THE GRILLED FILLET

INSTRUCTIONS

FILLET METHOD:

  1. Drizzle Willow Creek Jalapeño Flavoured Olive Oil all over the fillet and generously coat with Cape Herb and Smoky BBQ Spice.  
  2. Grill over hot coals until well seared; remove from the heat, let it rest, and slice.

INGREDIENTS

WHAT YOU NEED FOR THE CHOPPED SALAD

  1. 1 x cucumber, sliced into ribbons  
  2. 1 red onion, sliced 
  3. 300 g of sliced baby tomatoes  
  4. 1 bunch of salad onions, sliced lengthways  
  5. Handfuls of fresh mint, basil, and parsley  
  6. Freshly squeezed lemon juice  
  7. Willow Creek Coriander Flavoured Olive Oil   
  8. Willow Creek Cabernet Sauvignon Balsamic Vinegar Spray  
  9. Freshly chopped chillies  

INSTRUCTIONS

CHOPPED SALAD METHOD:

  1. Toss all the ingredients together in a large bowl and generously drizzle with olive oil and vinegar spray.  
  2. Serve on top of the focaccia, then cover with the sliced fillet. 
  3. Season with salt and pepper.
