INGREDIENTS
- 1 x large whole Delico fillet
- Willow Creek Blood Orange Flavoured Olive Oil
- Cape Herb and Spice Sweet Smoky BBQ Shaker
- Large handfuls of chopped fresh mint, flat leaf parsley, and basil
- Willow Creek Coriander Flavoured Olive Oil
- Large spoon of anchovies
- 2 large tablespoons of Rozendal Fynbos Vinegar
- 2 cloves of grated garlic
- 12 large caper berries, chopped
METHOD
1. Drizzle the fillet with Willowcreek Blood-Orange Olive Oil, ensuring an even coating, and generously coat with Cape Herb and Spice Sweet & Smoky BBQ Spice.
2. Grill over hot coals until the fillet is well-seared; then, remove it from the heat, allowing it to rest before slicing.
3. In a bowl, combine the remaining ingredients: chopped mint, parsley, basil, Willowcreek Coriander Olive Oil, anchovies, Rozendal Fynbos Vinegar, grated garlic, and chopped caper berries. Let the salsa verde mixture rest in the fridge for an hour to allow the flavours to meld.
4. Serve the succulent fillet slices with the refreshing, zesty salsa verde on the side.

- 500g of rosa tomatoes
- Olive oil and icing sugar
- 250g of exotic tomatoes, coloured green, yellow, and black
- 200g of softly marinated sun-dried tomatoes, sliced and covered in their packaged juices
- 5 balls of fior de latte mozzarella
- Willow Creek Blood Orange Flavoured Olive Oil
- Willow Creek Fig and Balsamic Reduction
- Fresh basil
METHOD
1. Toss the rosa tomatoes in olive oil with a light dusting of icing sugar. Grill them over a hot, open flame until the skins burst and the tomatoes acquire a delightful char. Set them aside to cool.
2. Slice the exotic tomatoes and gently combine them with the roasted rosa tomatoes and sliced sun-dried tomatoes. Spoon this colourful medley onto a serving platter, artfully arranging the mozzarella by tearing it and placing it on the tomatoes.
3. Drizzle the ensemble with the rich flavours of Willow Creek Blood Orange Olive Oil and Fig Balsamic. Sprinkle fresh basil leaves generously, and season with a touch of freshly ground black pepper and salt.
4. This culinary masterpiece is best served immediately, allowing the flavours to dance on your palate.
