INGREDIENTS
For the ribeye & corn:
- ±1.2–1.5 kg ribeye steak on the bone
- Willow Creek Extra Virgin Olive Oil Spray
- Coarse salt & freshly cracked black pepper
- 4 fresh corn cobs
- Willow Creek Balsamic Spray
For the chimichurri:
- 1 cup fresh flat-leaf parsley, finely chopped
- ½ cup fresh coriander (or fresh oregano), finely chopped
- 1 small garlic clove, finely grated
- ½ cup Willow Creek Garlic Flavoured Olive Oil
- 2 Tbsp red wine vinegar
- Squeeze of fresh lemon juice
- Pinch of chilli flakes (optional)
- Salt & pepper to taste
For the seasonal salad:
- Mixed salad greens (e.g. rocket, butter lettuce, baby spinach)
- Handful cherry tomatoes, halved
- ½ cucumber, sliced into ribbons
- 4–6 radishes, thinly sliced
- Willow Creek Extra Virgin Olive Oil
- Squeeze of fresh lemon juice, and salt & pepper
INSTRUCTIONS
STEP 1: Prepare & braai the ribeye
- Remove steak from the fridge ±30–40 min before braai to come to room temp.
- Generously spray both sides with Willow Creek Extra Virgin Olive Oil Spray.
- Season well with coarse salt and cracked black pepper.
- Braai over hot coals or gas grill for about 6–8 min per side, or until charred outside and cooked to preferred doneness (±55°C internal temp for medium-rare).
- Rest the steak on a board, loosely covered, for 10 min before slicing.
STEP 2: Char the corn
- Place corn cobs directly over medium-high coals or grill.
- Turn regularly until nicely charred all over (about 10–12 min).
- Finish with a few spritzes of Willow Creek Balsamic Spray for shine & tang.
STEP 3: Make the chimichurri
- In a bowl, combine chopped parsley, coriander, grated garlic and chilli flakes.
- Add Willow Creek Garlic Flavoured Olive Oil and red wine vinegar.
- Squeeze over a bit of fresh lemon juice, season with salt & pepper.
- Mix well and let stand for 10 min to develop flavour.
STEP 4: Assemble the fresh salad
- Toss salad greens, cherry tomatoes, cucumber ribbons & radish slices.
- Dress lightly with Willow Creek Extra Virgin Olive Oil, lemon juice, salt & pepper.
STEP 5: Serve
- Slice the rested ribeye into thick strips.
- Spoon over fresh chimichurri.
- Serve with charred corn and the seasonal salad on the side.
