Ricotta with Crushed Olives, Almonds & Lemon

INGREDIENTS
- ¼ cup slivered almonds
- ½ cup Willow Creek Spanish-Style Olives (Doy Pack), crushed and pips removed
- 1 tbsp capers
- ¼ cup fresh parsley, chopped (leaves and stems)
- ⅓ cup Willow Creek Extra Virgin Olive Oil
- ½ lemon, zested and juiced
- 370g smooth ricotta
METHOD
- Toast the almonds in a dry pan over medium heat for 4-5 minutes until golden. Stir occasionally to prevent burning. Set aside.
- Reduce the heat to low and add the olives, capers, and parsley to the pan with the olive oil.
- Stir in the lemon zest and juice, letting the flavours infuse for 10 minutes.
Charcuterie Board with Willow Creek Greek Olives
Ingredients:
- Cured Meats: Prosciutto, salami, and coppa ham
- Cheeses: Camembert, Boerenkaas, and blue cheese
- Breads & Crackers: Sliced baguette and seed crackers

Method:
- Fill a mixing glass with ice, gin, vermouth, and olive brine. Stir until well chilled.
