Zesty Greek-Style Roasted Chicken

INGREDIENTS
Greek-Style Roasted Chicken
- 1.5 – 2 kg of Delico Chicken Braai Packs
- 2 medium-sized onions, chopped
- 50 ml of Willow Creek Lemon Flavoured Olive Oil
- 6 cloves of grated garlic
- 500 ml of Cathedral Cellar Chardonnay
- Juice and rind of 4 lemons
- 2 bay leaves
- Cape Herb and Spice Company Greek Lemon and Herb Seasoning
METHOD
1. In a medium-sized saucepan, sauté the onions in the lemon olive oil until golden; then add the garlic and reduce the heat, allowing it to cook gently for 2 to 3 minutes.
2. Introduce the wine, lemon juice, bay leaf, and rind. Turn up the heat and let the mixture cook, reducing it by a third. Once done, let the concoction cool off completely.
3. Nestle the chicken in a spacious, airtight container or a zip-lock bag. Liberally coat it with the Greek Lemon and Herb Seasoning from Cape Herb and Spice, then pour over the prepared marinating liquid. For optimum flavour infusion, let it marinate overnight; however, two hours will suffice if time is of the essence.
4. Extract the chicken from the bag, place it on a braai grid, and season it once more with the Greek Lemon and Herb Spices. Roast over medium-hot coals for approximately 35 to 45 minutes. While the chicken cooks, reduce the reserved marinating liquid by half and pour it over the chicken as soon as it emerges from the fire.
5. Elevate your culinary experience by serving the succulent roasted chicken with charred lemons and a chilled glass of Cathedral Cellar Sauvignon Blanc.

Courgette Orzo Pasta Salad
- 2 cups of orzo pasta, cooked until al dente, strained, and cooled
- 8 large courgettes, sliced into thick ribbons, marinated in Willowcreek Olive Oil, Cape Herb and Spice Ground, Pink Salt, and Pepper
- 75 ml of Willowcreek Lemon Flavoured Olive Oil
- 1 large chopped red onion
- Juice and rind of 1 lemon
- A large tablespoon of wholegrain mustard
- A handful of chopped fresh herbs, such as Italian parsley and fresh oregano
- 2 chopped small Israeli cucumbers or 1/2 of a deseeded large cucumber
- 1 cup of sliced green olives
- 200g of feta
METHOD
1. Grill the courgettes on a scorching flame until beautifully browned and thoroughly cooked. Gently remove them and let them cool.
2. Blend together Willowcreek Lemon Flavoured Olive Oil, chopped red onion, lemon juice and rind, wholegrain mustard, and fresh herbs to create a delectable dressing.
3. Place the orzo in a bowl, generously coat it with the dressing, then add the cucumber and green olives.
4. Spoon the mixture into a serving dish and artfully garnish with feta and the gracefully roasted courgette ribbons. Sprinkle with additional fresh herbs for the perfect finishing touch.
