Sunday Roast Leg of Lamb with Lamb Fat Potatoes
The inspiration for this recipe comes from one of chef Mynhardt’s food heroes – Jamie Oliver. We love the simplistic approach to this dish, its hearty essence and its abundant family-sized portions. Chef Mynhardt adapted the recipe by adding crushed coriander to the pan and orange sweet potatoes to the roasting dish.

INGREDIENTS FOR THE LAMB
- 2 kg leg of lamb with shank on
- 3 tablespoons coriander, roasted and coarsely crushed
- Rosemary, roughly chopped
- 5 garlic cloves, grated
- 4 tablespoons of Willow Creek Olive Estate Parmesan Flavoured Olive Oil
- Juice and rind of one lemon
- Salt and pepper
- 800 g potatoes blanched, peeled, halved and scored with a fork
- 800 g orange sweet potatoes with raw skin on
INGREDIENTS FOR THE MINT SAUCE
- fresh garden mint
- 1 tablespoon of brown sugar
- 3 tablespoons of good-quality wine vinegar
- Remove the leg of lamb from the fridge and bring it to room temperature.
- Heat oven to 200°C.
- Mix coriander, rosemary, garlic and olive oil together and rub into the meat.
- Place a baking tray in the oven beneath a hot grid. Place the meat over the tray and roast.
- Tip the vegetables into the roasting pan after 45 minutes, shake around to cover with hot oil and continue roasting.
- Roast leg of lamb for 1 hour and 15 minutes for medium-rare to pink and 1 hour and 30 minutes if you like it more cooked.
- Make the mint sauce by chopping mint and mixing it with sugar and vinegar just before serving.
- Serve leg of lamb with potatoes and mint sauce.
