Slow Roasted Tomato & Garlic Soup Recipe

INGREDIENTS
Delicious soup ingredients:
- 1.2kg ripe tomatoes (halved)
- 1 whole garlic bulb (top sliced off)
- 1 red onion, quartered
- 80ml Willow Creek Signature Estate Blend EVOO
- 1 tsp sugar (optional)
- Salt & black pepper
- 500ml vegetable stock
- Handful fresh basil (optional)
INSTRUCTIONS
Making the soup:
- Preheat oven to 190°C.
- Toss tomatoes & onion in Willow Creek Estate Blend EVOO, salt & pepper.
Place garlic bulb cut-side up, drizzle with oil. - Roast 35–40 minutes until soft and slightly charred.
- Squeeze roasted garlic out of skins.
- Blend everything with stock until smooth.
Adjust seasoning. - Reheat gently.
- Serve with raw Willow Creek Estate Blend EVOO swirl and cracked pepper.
INGREDIENTS
Simple Focaccia Ingredients:
- 500g bread flour
- 10g instant yeast
- 10g salt
- 375ml lukewarm water
- 60ml Willow Creek Signature Estate Blend EVOO
- Flaky sea salt
- Fresh rosemary (optional)
INSTRUCTIONS
Making the focaccia:
- Mix flour, yeast, water & 40ml EVOO. Knead 8–10 min until smooth.
- Add salt, knead briefly.
- Rise 1 hour until doubled.
- Press into oiled tray.
- Dimple deeply with fingers.
- Drizzle remaining EVOO generously.
- Add salt + rosemary.
- Bake 220°C for 20–25 minutes until golden.
- Brush lightly with Willow Creek Estate Blend EVOO Spray while warm.
