Seared Duck Breast and Orange Salad Recipe
My ultimate food hero, Jamie Oliver, inspired this recipe, to which we have added our own unique twist. Seared duck breast has always been a firm favourite of mine, and stretching the meat into a salad is a cost-effective way to have glamour and budget on a plate. Make the recipe your own by adding fresh ingredients and herbs from the garden. You could also easily serve this dish as a main course.

INGREDIENTS
- 3 to 4 large duck breasts
- Willow Creek Blood Orange Flavoured Extra Virgin Olive Oil
- Salt and pepper
- 1 baguette, sliced
- 10 sliced fresh radishes
- 3 to 4 sliced oranges
- 1 cup of crushed walnuts
- Fresh watercress and fennel or dill
- Crushed pink peppercorns
NOTES & TIPS
- Use any type of citrus, like clemengolds or blood oranges, if in season.
- You can substitute roasted cashew nuts for walnuts.
- When slicing the radishes, place them in ice water for 20 minutes; they will become super crispy and translucent.
- Using a day-old baguette adds even more flavour when roasted.
INSTRUCTIONS
- Pat the duck breasts dry and score the skin with a sharp knife. Cover generously with Willow Creek Blood Orange Flavoured Extra Virgin Olive Oil and season with salt and pepper.
- Roast the duck breasts in a hot pan with the skin side down for about 5 to 6 minutes until golden brown. Turn around and roast the meat side for another 5 to 6 minutes. Remove from the pan and let it cool, keeping the pan juices.
- Slice the breasts into thin, even slices, drain any excess liquid, and set aside to assemble.
- Roast the slices of baguette until well toasted on each side in the same pan; remove and let it cool.
- Assemble the salad by placing the baguettes at the bottom of a large serving dish and placing the sliced duck breast on top. Garnish with the sliced radishes, orange slices, and walnuts, and top with fresh rocket and some fennel or dill.
- Drizzle with more of the Willow Creek Blood Orange Flavoured Extra Virgin Olive Oil and season with pink peppercorns.
