Quinoa, Beetroot & Goats Cheese Salad

INGREDIENTS
- 40g fresh rocket
- 100g plain goat’s cheese
- 2 cups uncooked quinoa
- Half a red onion, sliced
- 400g cooked and pickled baby beetroot
- Willow Creek Garlic, Chilli & Ginger Infused Balsamic Reduction
- Willow Creek Extra Virgin Olive Oil
METHOD
- Cook quinoa in salted water until fluffy.
- Rinse, drain and cool quinoa and transfer to serving dish.
- Mix sliced red onion into quinoa.
- Carefully place baby beets into quinoa, do not mix.
- Roughly break and crumble goat’s cheese over salad.
- Dress and season rocket leaves with Willow Creek Extra Virgin Olive Oil, salt and pepper, and place in the middle of top of your quinoa salad.
- Serve and enjoy with a drizzle of Willow Creek Garlic, Chilli & Ginger Infused Balsamic Reduction.
