Vegetable Platter with Lamb Koftas and Pot Bread Recipe

I have always had a fascination with fire. From my early childhood years growing up in the Eastern Free State until now. As kids, we were always on a mission to cook something on a fire or make warming fires to ward off the winter cold. The flavours that get transported from fire and flames to the food immediately take me back to those carefree years. Grilling vegetables on an open fire gives them a fantastic depth of flavour. We include an easy pot bread recipe with a twist: pot breads are easy and hassle-free to prepare and bake, and they are wonderful for feeding a large group of family and friends. The lamb koftas are for all my fellow meat lovers out there; they are quick and easy to prepare! We serve this braai feast with a KWV Classic Collection Sauvignon Blanc, a firm favourite and a wonderful reminder of the long summer days ahead. Enjoy!

Recipe

STEP 1: Herb Pesto & Pot Bread

PESTO RECIPE

INGREDIENTS

METHOD

  1. Place all ingredients in a food processor and chop till smooth 
  2. Season with salt and pepper and some more extra virgin olive oil 

POT BREAD RECIPE

INGREDIENTS 

METHOD

  1. Mix the dry ingredients 
  2. Add half of the water, mix, and add the rest 
  3. Knead until soft and smooth  
  4. Place a damp cloth over the dough and let it rise for 30 minutes 
  5. Flatten the dough out in a rectangular shape on a floured wooden chopping board 
  6. Spread herb pesto over the bread, and roll the dough into a long sausage from the shortest side  
  7. Place in a well-greased ovenproof pot, let it rest, and double in size 
  8. Bake at 220 degrees Celcius for 30 minutes 

STEP 2: Flamegrilled vegetables with a garlic mayo

INGREDIENTS

Select fresh seasonal vegetables: asparagus, tender-stem broccoli, orange sweet potato, baby marrow, and peppers. 

METHOD

  1. Toss the vegetables in Willow Creek Garlic Flavoured Extra Virgin Olive Oil 
  2. Season with Cape Herb and Spice Roast Veggie Seasoning 
  3. Place onto a braai grid and roast over a hot fire for 12 to 15 minutes 
  4. Season with more veggie seasoning and freshly squeezed lemon juice  
  5. Serve with garlic mayonnaise  

GARLIC MAYO RECIPE

INGREDIENTS

METHOD: 

  1. Add all the ingredients to a glass jug and blend till smooth 
  2. Season with salt and pepper  

STEP 3: Lamb Koftas

INGREDIENTS

METHOD

  1. Mix all the ingredients together except the olive oil  
  2. Divide the mixture into 6 balls and use your hands to shape it into sausages 
  3. Skewer the meat and brush with Willow Creek Basil Flavoured Extra Virgin Olive Oil  
  4. Let it rest in the fridge for about an hour 
  5. Grill over medium-hot coals for 10 -12 minutes, or until cooked  
  6. Season with salt and pepper
