For the Lamb Rump:

PREPARATION INSTRUCTIONS

For the Lamb Rump:

  1. In a bowl, combine Willow Creek Lemon Infused Extra Virgin Olive Oil, lemon juice, minced garlic, Origanum, mint, salt, and pepper.
  2. Rub the marinade over the lamb rump and marinate for at least 2 hours, or overnight for deeper flavour.

For the Flatbread:

  1. Put the flour and sea salt into a large bowl, creating a well in the centre.
  2. In a jug, mix the yeast, lukewarm water, honey, and Willow Creek Lemon Infused Extra Virgin Olive Oil. Let it sit for a few minutes.
  3. Gradually pour the yeast mixture into the flour, stirring and incorporating the flour from the sides to form a dough.
  4. Knead the dough on a flour-dusted surface for 10 minutes, until smooth and elastic.
  5. Cover with a damp tea towel and let it prove in a warm place for 1 hour, or until doubled in size.
  6. After proving, split the dough into 6 equal pieces. Roll each ball out on a flour-dusted surface to about 1cm thick.
  7. Heat a cast iron pan over high heat. Brush the pan and dough with Willow Creek Culinary Olive Oil Blend. Cook each flatbread for 3 minutes per side until golden and puffed.

  • 1 red onion, thinly sliced
  • ½ cup white vinegar
  • ½ cup water
  • ½ tsp mustard seeds
  • 2 whole star anise
  • 1 tbsp sugar
  • 1 tsp salt

For the Fire-Kissed Cherry Tomatoes:

For Serving:

  • Fresh wild rocket

This recipe highlights the delicate flavours of your chosen olive oils and complements the marinated lamb beautifully.

COOKING INSTRUCTIONS

Pickle the Red Onions:

  1. In a small saucepan, bring the vinegar, water, mustard seeds, star anise, sugar, and salt to a boil.
  2. Pour the mixture over the sliced red onions in a bowl and let it pickle for at least 30 minutes.

Prepare the Tzatziki:

  1. In a bowl, mix together the Greek yogurt, cucumber, minced garlic, lemon juice, olive oil, salt, and pepper.
  2. Chill until ready to serve.

 Cook the Lamb Rump:

  1. Preheat the fire or grill to medium-high heat. Grill the lamb rump over direct heat for 8-10 minutes per side for medium-rare, or adjust according to your preference.
  2. Let the lamb rest for 10 minutes before slicing.

Fire-Kissed Cherry Tomatoes:

  1. In the cast iron pan, heat Willow Creek Culinary Oil Blend over medium-high heat.
  2. Toss the cherry tomatoes in the pan with salt and pepper, cooking for 3-4 minutes until blistered and slightly charred.

 Assemble and Serve:

  1. Slice the lamb rump and serve alongside the garlic-infused flatbread, tzatziki, pickled red onions, fire-kissed cherry tomatoes, and a handful of wild rocket.
