INGREDIENTS
- 200g spaghetti (homemade or store-bought)
- 1 red onion, sliced
- 4 cloves of garlic, thinly sliced
- 2 red chillies, deseeded and sliced
- Willow Creek Privé Extra Virgin Olive Oil (for cooking and drizzling)
- Salt, to taste
- Freshly ground black pepper, to taste
- Willow Creek Spanish Style Green Olives, pitted and sliced
- Willow Creek Kalamata Greek Style Olives, pitted and sliced
- For garnish: freshly grated Grana Padano Parmesan
INSTRUCTIONS
- Cook the Spaghetti:
Bring a large pot of salted water to a boil. Add the spaghetti and cook according to the package instructions until al dente. Drain, reserving 1/2 cup of pasta water. - Prepare the Sauce:
In a large pan, heat a generous amount of Willow Creek Privé Extra Virgin Olive Oil over medium heat.
Add the sliced red onions, garlic, and red chilies. Cook until the onions are soft and the garlic is golden and fragrant, taking care not to burn them. - Combine Pasta and Sauce:
Add the cooked spaghetti to the pan with the onion, garlic, and chilli mixture.
Toss to coat the spaghetti in the oil. If the pasta seems dry, add a little of the reserved pasta water to create a silky sauce. - Season and Add Olives:
Season with salt and freshly ground black pepper to taste.
Stir in the Willow Creek Spanish Style Green Olives and Willow Creek Kalamata Greek Style Olives. - Plate and Garnish:
Divide the spaghetti between two plates.
Drizzle each serving with a bit more Willow Creek Privé Extra Virgin Olive Oil.
Finish with freshly grated Grana Padano Parmesan. - Serve:
Serve immediately, enjoying the simple and elegant flavours of this classic dish.
Note: You can use store-bought spaghetti instead of making your own to save time.
HOMEMADE SPAGHETTI USING A PASTA MACHINE
INGREDIENTS
- 200g (1 3/4 cups) all-purpose flour
- 2 large eggs
- 1/2 teaspoon salt
- 1 tablespoon olive oil (optional)
INSTRUCTIONS
- Prepare the Dough:
– On a clean surface, make a mound with the flour and create a well in the centre.
– Crack the eggs into the well, add the salt and olive oil (if using).
– Gradually mix the eggs into the flour with a fork, then knead the dough by hand until it becomes smooth and elastic, about 8-10 minutes.
– Wrap the dough in plastic wrap and let it rest for at least 30 minutes at room temperature. - Roll Out the Dough:
– Divide the dough into 4 equal parts.
– Flatten one piece into a rough rectangle and cover the remaining pieces with a damp cloth to prevent drying out.
– Set your pasta machine to the widest setting and feed the dough through.
– Fold the dough into thirds and feed it through again. Repeat this process 2-3 times.
Gradually narrow the machine settings and continue to feed the dough through until you reach the desired thickness (usually setting 5 or 6). - Cut the Spaghetti:
– Attach the spaghetti cutter to the pasta machine and feed the rolled dough through the cutter.
– Toss the cut spaghetti with a bit of flour to prevent sticking. - Cook the Spaghetti:
– Bring a large pot of salted water to a boil. Add the freshly made spaghetti and cook for 2-3 minutes, until al dente. Drain and use immediately.
