Green Pea and Edamame Bean Salad with Mint and Chilli Recipe

INGREDIENTS
- 500 g of frozen garden peas
- 250 g of fresh or frozen edamame beans
- 1 bunch of fresh roughly chopped mint
- 1 fresh red chopped chilli
- Juice and rind of 1 lemon
- 1 lemon sliced in segments
- Willow Creek Basil Flavoured Extra Virgin Olive Oil
- Salt and pepper
NOTES & TIPS
- Use a combination of frozen garden peas and finely sliced green beans if edamame beans are not available.
- If you want less heat from the chilli slice it open and scrape out the seeds.
INSTRUCTIONS
- Bring a large pot of water to a boil and prepare a large mixing bowl with ample ice and water.
- Blanch the peas and beans for 2 minutes in the boiling water and immediately scoop them out and place them into the ice water—let them rest for 5 minutes and strain the beans—set aside.
- Place the peas in a large salad dish or plate and mix with the lemon juice and rind.
- Drizzle generously with the Willow Creek Basil Flavoured Extra Virgin Olive Oil, scatter chillis over, season with salt and pepper, and garnish with lemon segments.
