Festive Rock Star Oysters

INGREDIENTS
Fresh West Coast Oysters (16-20)
French Mignonette Sauce:
- 2 large shallots, peeled and finely chopped
- 60ml (1/4 cup) red wine vinegar
- 60ml (1/4 cup) rice vinegar
- 10ml (2 teaspoons) sugar
- 2.5ml (1/2 teaspoon) salt
- 15ml Cape Herb and Spice Bold Black Peppercorns
Ex-Girlfriend Sauce:
- 30ml Willow Creek Basil Flavoured Olive Oil
- A handful of fresh coriander
- A handful of fresh basil
- A handful of fresh mint
- 100ml apple cider vinegar
- 50ml brown sugar
- 15ml fresh ginger, minced
- 1 green chilli, deseeded and chopped
- Salt and pepper to taste
METHOD
French Mignonette Sauce:
1. Mix all the ingredients and refrigerate overnight to let the flavours meld.
Ex-Girlfriend Sauce:
2. Place all the ingredients in a jug blender, season to taste, and blend until smooth.
3. Chill in the fridge for 10 minutes.
Notes and Tips:
1. Oysters freeze exceptionally well; open and freeze them on a flat surface, then thaw on ice for 30 minutes before serving, making entertaining a breeze.
2. Opt for medium-sized oysters for the best balance of size and flavour.
3. Both sauce recipes can be easily doubled to accommodate larger gatherings.
