Festive Rare Roasted Leg of Lamb with Mustard Potatoes Recipe

Having grown up in the Eastern Free State, a leg of lamb always reminds me of the festive season. It is actually surprising how far you can stretch a leg of lamb, which makes it great for entertaining and catering to larger groups. Ask your butcher to debone and butterfly the lamb and for a smaller cut if you are catering for a smaller group.

INGREDIENTS

  • 1 deboned, butterflied leg of lamb
  • Willow Creek Garlic Flavoured Extra Virgin Olive Oil
  • 2 kg of baby new potatoes or Nicola potatoes
  • 4 heaped tablespoons of good quality whole grain mustard
  • 2 finely chopped red onions
  • 3 tablespoons of red wine vinegar
  • 750 g of frozen peas
  • Handful of fresh basil

NOTES & TIPS

  1. The meat can successfully be done on a hot coal fire outside and prepared as above.
  2. Ask the butcher for the bones and off cuts of the meat and cook a lamb stock with onions, carrots, garlic, and peppercorns. Freeze and use later.

INSTRUCTIONS

  1. Warm a large griddle pan.
  2. Rub the meat generously with the Willow Creek Garlic Flavoured Extra Virgin Olive Oil and season with salt and pepper.
  3. Roast on the griddle pan for about 8 to 10 minutes a side, making sure that all the meat is browned. Remove and let it rest; as soon as it is just slightly warm to the touch, slice with a sharp knife into generous slices.
  4. Boil the potatoes in a large pot of salted water; strain and slice in half. While still warm, mix with the mustard, red onions, and vinegar; season with salt and pepper and let it rest.
  5. Pan fry the peas in a large frying pan with some butter for about 5 minutes.
  6. On a large meat tray, place the mustard potatoes and cover with the peas. Place the sliced meat over the vegetables and garnish with fresh basil and some freshly squeezed lemon juice.
  7. Drizzle with more of the Willow Creek Garlic Flavoured Extra Virgin Olive Oil.
