Crispy Salt and Pepper Squid Recipe

I love crispy salt and pepper squid as a festive tapas summer starter. Squid tentacles and tubes are readily available from most supermarkets and are a wonderful, cost-effective ingredient. The secret to the ultra crispy batter is using regular flour and corn flour. The added baking powder and soda water in this recipe make it puff out even more. The best way to serve is simply with salt and pepper and lashings of lemon juice.

INSTRUCTIONS

  1. Pat the cleaned squid dry and leave to rest in the refrigerator for at least 20 minutes until icy cold.
  2. Heat the oil in a deep sauce pan.
  3. Mix the corn flour, cake flour, baking powder, and soda water together to create a batter that resembles thick cream.
  4. Dip the squid into the batter and fry in the hot oil for 3 to 4 minutes; remove and drain on kitchen towel paper.
  5. Serve immediately with salt, coarse black pepper, and lemon juice, and for extra flavour, drizzle with Willow Creek Coriander Flavoured Extra Virgin Olive Oil.
