TANTALISING TURMERIC SMOOTHIE WITH A BLUEBERRY AND WALNUT SALAD

With this recipe, you won’t have to compromise! This brain-boosting salad contains both crisp walnuts and luscious blueberries, which are rich in antioxidants, vitamin K1, vitamin C and manganese. Top it off with a milk smoothie infused with turmeric and honey. Enjoy this guilt-free recipe as a light lunch that will boost both your energy and mental levels. 

BLUEBERRY AND WALNUT SALAD  

 INGREDIENTS 

  •  2 cups of leafy greens (kale or spinach) 
  • 1 cup of walnuts (raw or toasted) 
  • 1 cup of blueberries 
  • ½ cup of Willow Creek Olive Estate extra virgin olive oil 
  • ¼ cup of vinegar  
  • 1 tablespoon lemon juice 
  • 3 teaspoons of honey 
  • Pinch of salt and black pepper 

 

INSTRUCTIONS 

  • Pour the Willow Creek Olive Estate extra virgin olive oil, vinegar, lemon juice, salt, pepper, and honey into a separate jug. Stir the mixture or briskly whisk the ingredients together until well combined.  
  • Fill a salad bowl with your leafy greens. 
  • Add your walnuts and blueberries to the salad. 
  • Drizzle the olive oil mixture over the salad and combine it.  

 

TANTALISING TURMERIC SMOOTHIE 

INGREDIENTS 

  •  2 ripe bananas 
  • 1 ½ cup of almond milk 
  • 1 piece of fresh turmeric 
  • 2 tablespoons of honey 
  • 4 pitted and chopped dates 
  • ¼ of cinnamon 
  • ¼ of ground turmeric 
  • 1 cup of ice 

 

INSTRUCTIONS 

  •  Combine the bananas and the almond milk in a blender and process until smooth.  
  • Add the honey and chopped dates. 
  • Add the spices to your smoothie. 
  • Add the ice. You can add more to achieve the right consistency if needed 
  • Pour into glasses and sprinkle a bit of cinnamon on top.  
  • Serve and enjoy!
