RED WINE CHICKPEA STIR-FRY WITH WILLOW CREEK OLIVE ESTATE’S BLACK OLIVES.
Are you craving Mediterranean food? This Veggie Stir-fry will curb your craving.
– 1 packet of egg noodles
– 1/4 cup Willow Creek Olive Estate’s black olives
– 1/4 cup sun-dried tomatoes
– 2 cup spinach/arugula mix
– 1/4 cup feta cheese
– 1 cup red wine
– 1/4 cup lemon juice
– 4-6 small bell peppers
– 1 tablespoon garlic salt
– 1 tablespoon black pepper
– 1/2 cup chickpeas
– 2 teaspoon crushed red pepper flakes
– 1/4 of an onion
– Willow Creek Extra Virgin Olive Oil (for frying)
– Make the egg noodles as directed, strain and set aside.
– Heat Willow Creek Olive Estate’s Extra Virgin Olive Oil in a pan and add chopped onion, sliced olives, spices, sliced bell pepper, sun-dried tomatoes, lemon juice, red wine and chickpeas.
– Once bell peppers are soft, add the egg noodles, feta and spinach/arugula mix. Fry until spinach has wilted slightly. Add more red wine if needed.
– Serve with extra Willow Creek Olive Estate’s black olives and feta as a garnish.
