Rainbow Pulled Pork Salad

INGREDIENTS

150g Pulled Pork

1 cup shredded Purple Cabbage

1 cup Corn

½ cup sliced Cucumber

½ cup sliced Red Peppers

½ cup Guacamole

DRESSING

1 tbsp Willow Creek Extra Virgin Olive Oil

2 tbsp Lime Juice

1 tbsp Barbeque Sauce

Salt and Pepper to taste

METHOD:

  1. Assemble the salad by arranging vegetables in rainbow colour order or simply throw them in and mix.
  2. In a small bowl or cup, combine the Willow Creek Extra Virgin Olive Oil, lime juice, barbecue sauce, salt and pepper. Mix well and drizzle over salad.
  3. Enjoy with a side of guacamole.
