Want to spice up that next serving of gourmet stir-fry? This peri-peri chilli paste packs quite a punch and will add some extra flavour to any dish! Our Willow Creek extra virgin olive oil unlocks all of the aroma infused in this paste, with notes of smoked paprika, rosemary, bay leaves and garlic ready to invigorate the palate. You will be adding this paste to your favourite marinade in no time!

Ingredients

  • 1/2 cup Willow Creek extra virgin olive oil
  • 12 cloves peeled Garlic
  • 1 large Red pepper roughly chopped
  • 1 cup roughly chopped Red chillies
  • 1/2 cup chopped Fresh ginger
  • 1 Tablespoon Ground cumin
  • 2 teaspoons Salt
  • 2 teaspoons Smoked Paprika
  • 3 Tablespoons chopped Rosemary
  • 3 fresh Bay leaves
  • 3 Tablespoons Lemon zest
  • 3/4 cup Lemon juice
  • 1/2 cup Willow Creek Jalapeno oil
  • A handful of fresh coriander

Method

  1. Place the olive oil and all the ingredients eexcept the lemon zest, lemon juice and jalapeno oil and coriander into a large frying, fry gently up the the mixture becomes aromatic and the the red peppers and chillies soften slightly. Remove from the heat and keep covered until the mixture is luke warm.
  2. Place the mixture into the bowl of a Food processor with the lemon zest,juice, jalapeno oil and coriander, blend to a paste.
  3. Store in the fridge and use in marinades and stir-fry.
  4. Top up with more olive oil use within 10 days
