Pears in Balsamic Style Vinegar


6x Forelle Pears
250ml Willow Creek Balsamic Style Cabernet Sauvignon Vinegar
85ml Water
125ml Brown Sugar
1x Vanilla Pod
2x Star Anise
2x Cinnamon Sticks


Halve Vanilla pod lengthwise with a sharp knife and scrape out the seeds.
Combine Cabernet Sauvignon Vinegar, water, Brown Sugar, Vanilla pod and seeds, Anise & Cinnamon Sticks in a heavy based pan.
Melt sugar in liquid over low heat until dissolved.
Add pears and poach gently until tender.
Remove pears and let the sauce simmer to form a syrupy reduction.
Serve pears with balsamic reduction and mascarpone cheese.
